The Dish :: Garlic Carrot Soup
This is a great quick-and-easy soup that is light and full of vitamins.
1 onion - rough dice
A? cup garlic - minced
2 lbs carrots - chopped into 2 cm pieces
1 potato - diced into 2 cm cube
2.5 litres vegetable stock
A? cup orange juice
Salt and pepper
Sautee onions and garlic till golden brown and transparent.A Add garlic, carrots, potato, and vegetable stock.A Bring to a boil.A Simmer till carrots and potatoes are tender when poked with a fork.
Puree with hand held blender.A If you do not have a hand-held blender blend in batches with a table-top blender.
Once the soup is a smooth and thick consistency, add orange juice, salt, and pepper to taste.
